Popsicles/Ice blocks from your garden or markets


 


All kids love ice blocks! And Adults too. But most of them are packed full of refined sugars and have zero nutrition. These ice blocks contain fresh fruits, some even hidden vegetable and you can also experiment adding various superfoods.! I like to share my top 10 recipes go for mixtures I experimented with this summer. We enjoy them on a hot summer day, post swim or summer activities.

 

 You will need:

Ice blocks mould – PBA free

High speed blender

Spring water to blend for consistency if desired

 

 

Mango Lassi Protein Ice blocks

  • 80 g mango (chopped,peeled) about two mangos

  • 2-4 tsp sweetener of your choice such as honey or coconut nectar

  • 140 g natural vanilla coconut yoghurt

  • 1 tbls of hemp protein or protein your choice. Collagen goes well too

 

Green smoothie Ice locks

·      1 -2 bananas or mangos (seasons)

·      ½ avocado

·      ½ cup natural vanilla coconut yogurt

·      2 chopped silverbeets or handful of spinach

·      2-4 sweetener of your choice such as honey or coconut nectar

·      1 tsp of mix of spirulina & chlorella

Or

  • 1/2 cup mango

  • 1/2 green apple

  • 1 Lebanese cucumber

  • 1/2 cup baby spinach

  • 6 mint leaves

  • 1/2 cup water or coconut cream for creamy consistency

  • 1 tsp green powder your choice

 

 Chocolate Ice blocks

 ·      3 ripe bananas

·      1 -2 tbls of raw cacao powder

·      1 tsp of tahini

·      1 dollop of coconut cream of yogurt

·      1 tbls of cooked sweet potato (optional)

·      2 majol dates

( optional - add black sapote if in season)

 

 Watermelon and mint

  • 1.5 Cups of fresh watermelon slices

  • 1 Cup of peppermint tea (brewed for two minutes and cooled)

  • 1 handful of fresh mint leaves

  • Sweeten to taste with honey or maple (optional)

 

Beets and berries Ice blocks

 ·       1 small beetroot -raw, peeled & quartered

·       250 g strawberries or raspberries (2 cups) fresh or frozen

·       1 banana/s

·       ½ small zucchini/s – peeled & quartered (optional)

·       250 ml coconut water (1 cup) or coconut cream for creamy option

·       ¼ cup rice malt syrup, honey or maple syrup (optional)

 

Carrot Orange Ice block

·      Two oranges

·      1 carrot

·      Teaspoon grated ginger

·      Tablespoon honey

·      250 ml coconut water or coconut cram for a creamy option

 

Kiwi Honeydew Ice blocks

 ·      1 Cup of honeydew melon chopped

·      2 -3 kiwis

·      Handful of spinach

·      1-2 tsp of honey to sweeten (or sweetener your choice, optional)

·      250ml coconut water

 

Pineapple mango squash Ice blocks

 ·      1 cup of chopped pineapple

·      1 chopped mango

·      Few chunks of Cooked and cooled butternut squash

·      1 tsp of chia seeds

·      Teaspoon of honey

·      250ml of coconut water

 

 

Coconut Golden Milk Ice blocks

 ·      1 ½ cup full fat coconut milk

·      ½ cup almond milk

·      1 ½ teaspoon ground turmeric

·      1 ½ teaspoon ground ginger

·      ¼ teaspoon black pepper

·      4-5 tablespoons of honey

Add handful of cashews for a thicker consistency ( optional )

 

 Preparation:

Put in high-speed blender and blend to creamy consistency.

Pour in the moulds, Insert the sticks and set in the fridge for 5-6 hours or until hard. For more runny consistency Ice blocks, you may need to put the mixture it the mounds in the freezer for one hour first then put the sticks in when the consistency is more frozen, then freeze until ready.
